Aam Ki Launji: Ingredients
- Raw mango pieces – 1 cup
- Fennel seeds – 1/2 tsp
- Cumin – 1/2 tsp
- Rai – 1/2 tsp
- Red chili powder – 1/2 tsp
- Ajwain – 1/4 tsp
- Jaggery – 1 cup
- Chaat masala – 1/2 tsp
- Garam masala – 1/2 tsp
- Black salt – 1/2 tsp
- Asafoetida – 1 pinch
- Oil – 2 tbsp
- Water – 1 cup
- Plain salt – as per taste
Recipe
- To make Aam Ki Launji, first wash the raw mango thoroughly, and peel it.
- Now cut it into long pieces and separate the kernels.
- Now put 2 spoons of oil in a pan and heat it on medium flame.
- When the oil becomes hot, add cumin, mustard, fennel, asafoetida and then crackle them well.
- After this, add other spices to it and cook it for 2 minutes while mixing it all well.
- Now put the raw mango in the pan and mix it with the help of a ladle.
- Now add 1 cup of water to it and let the launji cook for 10 minutes, after that add salt according to the test.
- Now add crushed jaggery to it, and increase the flame of the gas so that the jaggery melts.
- After this add chaat masala and garam masala and mix it with launji.
- Now cook it for 5 more minutes and lo, your launji is ready.
