Ingredients

  • 1/2 cup Japanese curry roux (store-bought blocks or homemade)

  • 1 tbsp of vegetable oil

  • 1 chopped carrot

  • 2 cups water or dashi broth

  • 300g white fish fillets (like cod or tilapia)

  • 1 potato (peeled and diced)

  • 1 thin sliced onion

Step By Step Guide

Heat The Pot

First, take a heavy-bottomed pot and heat the vegetable oil over a medium flame. Now add thin sliced onions and toss until they are soft.

Add The Veggies

Next, add the chopped potatoes and carrots to the pot and cook for a few minutes. Keep stirring to avoid stickiness.

Simmer The Ingredients

Moving on to the next step, pour in water or dashi broth and bring all the ingredients to a boil. Lower the heat and cover the pot with a lid. Let it simmer for about 10-15 minutes or until the vegetables are tender.

Add The Fish Chunks

Now carefully add the fish pieces into the pot and simmer for about 5 minutes or until the fish is completely cooked.

Prepare The Sauce And Simmer

After you have done with the above-mentioned steps, gently break the curry roux into pieces and stir it occasionally until it melts completely and the sauce thickens. Simmer the ingredients altogether for about 4-5 minutes. Let them absorb all the flavours.
