1. Basic Tomato gravy
Place the coarsely chopped tomatoes in a pan and add the onion, garlic, ginger, green chillies, salt, red chilli powder, black cardamom, small cardamom, cinnamon and butter. Then, add a little water, cover and simmer until tender. Remove all spices and grind the mixture in a blender, then filter and save in a bowl.
2. Onion-Tomato Masala
Finely chop the onion and tomato, heat the oil in a frying pan, and fry the cumin, garlic and onion. Add green chillies and tomatoes, cover, and season with salt and pepper. Add the red pepper, turmeric, coriander powder, and cumin powder, stir briefly, cool, and store in the refrigerator.

3. All-Purpose gravy
Sauté the chopped onions in oil and add the chopped tomatoes, ginger, garlic, cashew nuts and melon seeds. Grind in a grinder, then add oil to the same pan and mix in a mixture of dried red chillies, turmeric powder, red chilli powder, mango powder, and mashed tomatoes. Fry until the oil starts to ooze out of the sauce, then add water and continue to fry. Keep it in a jar.
4. No Onion, No Garlic gravy
Sauté tomatoes in a pan with oil and add diced bell peppers, ginger, whole red peppers, coriander stalks, and whole spices of your choice. Mix the mixture, then add the oil to the same pan and mix the dry red pepper, turmeric powder, red pepper powder, mango powder and tomato puree mixture. Cook for 5-7 minutes.
5. Tomato and Dahi-based gravy
Heat the oil in a pan, add the finely chopped onion and green chilli peppers and fry. Add ginger garlic paste, tomato passata and spices and fry for a while. Season with salt, add cottage cheese and fry until the oil separates. This masala adds great flavour to your vegetables.
